In a very unscientific test using a 94 LT1 PCM, I got the following results:

At idle, the knock retard changed from a normal of 0 degrees to about 4 degrees when the KS was unplugged.
This amount stayed constant up to about 4000 RPM, at which level the retard increased, reaching a maximum of 12 degrees at 6000 RPM.

When you unplug the knock sensor, it should set a code (DTC 43 or P0332). In OBD-1 when the code sets (turns on SES, based strictly on the voltage on the circuit), the PCM starts to retard timing based on engine operating conditions (RPM and MAP). Retard can range from 0 - 15degrees. The DTC 43 description in the factory manual confirms this, but it is not specifically stated on the P0332 (does not turn on SES, looks at things other than the voltage) description in the manual. Can't think why they wouldn't do the same though.
