A friend of mine offered this riser/drop adjustable hitch. Assuming the 2" is all I need, does anyone know if these adjustable ones are reliable?

I don't see why it wouldn't be. A lot of the bumper pull hitches on big trucks are like that except with big bolts to adjust hitch height as needed. As long as it's rated for the weight it should be fine.
I just need to find out what the trailer weighs. Im thinkin i may be over the 5k mark though.

I would just go hook up to the trailer and see how bad if at all the caddy sags. Granted your car is gonna be on the heavy side, but a 3k lb trailer is light. Prob only talking 700-800lb on tongue.

The truck is not perfectly level on the daily, but is when loaded.
Between location of car and the leveling, you should be fine. If it sags some, then your car doesn't have to be as far forward.
Just gotta pick up a weight rated hitch ans Ill be goin to make trailer pick up arrangements.

Your caddy have air ride? If so, it should level it's self out. Does on my 05 Yukon Denali. Takes a couple minutes after loaded and vehicle running.

Lol. Yeah. Its lowered. Kept the bags and got the modified sensor rod.
It rides great... less floaty than stock. If i dont slow down for rr trax and launch it... ill hit the bump stops in the rear.
On the tahoe forum there is a free mod for more travel that would fix that. A piece of metal on the frame that serves no purpose needs to be cut off.
